Why You Will Love This Recipe

How many times have you added a side dish to a meal as an afterthought? This recipe will change that! Easy to put together, this crisp and tangy veggie and fruit salad features a simple, oil-free, dairy-free dressing making it an addition that you will look forward to adding to your plate.

Ingredients

  • Fresh Lemon Juice – I tested this recipe with fresh lemon juice, not bottled, and that is what I recommend.
  • Maple Syrup – Use real maple syrup, imitation will not work here.
  • Dijon Mustard – Mustard adds a bit of tang but also helps form the dressing by providing a bit of emulsification.
  • Salt – A pinch of salt provides balance to the dressing ingredients, and brings the flavors together.
  • Celery – Gives the salad crunch and is a slightly bitter counterpoint to the grapes.
  • Green Seedless Grapes – Make sure you get green grapes, they have a different flavor than red. Check the package to make sure your grapes are seedless.
  • Sweet White Onion – Each type of onion has a distinct flavor profile, and I prefer sweet white onion in this recipe. This article discusses the different types of onions and their best uses.

Method

Combine the lemon juice, maple syrup, dijon mustard, and a pinch of salt. Taste and adjust salt as needed.

Next, thinly slice the celery, quarter the grapes, and mince the onion. Add to a large bowl and pour the dressing over the rest of the ingredients. Mix well to coat.
