Air Fryer Taquitos

This easy vegan air fryer taquitos recipe gets dinner to the table in just 30 minutes, making it the perfect weeknight meal!

Why I Developed This Recipe

A good weeknight meal should have a short ingredient list. And these taquitos do. Grab a can of beans, frozen corn, and some spices and you have everything you need for the filling. Add a package of corn tortillas and some Vegan Creamy Salsa Dressing or salsa as a dipping sauce, and you are all set.

If you have leftovers of my Vegan Refried Black Beans you can get dinner on the table even faster – just add the defrosted corn, no need for additional seasonings! Don’t forget to add Pickled Carrots and Jalapeños with Red Onion on the side!

Method

Preheat your air fryer if necessary for your model. I used a Breville Smart Oven to test this recipe, but from what I have read, the results should be similar across different models.

Prepare the Filling

Drain the pinto beans, reserving some of the liquid. Place the beans in a bowl and begin mashing with a potato masher. Keep mashing, until beans begin to form a paste, leaving about 1/4 of the beans partially mashed. This adds texture to the finished dish.

Different brands of canned beans will have different moisture levels. If the filling starts to look dry as you mash, add the reserved liquid 1/2 teaspoon at a time, being careful that the filling does not become too thin to hold together.

Stir in seasonings and salt, to taste. Fold in defrosted corn kernels.

Please note that my recipes generally do not include a specific amount of salt in the ingredient list as differences in the type of salt you choose can significantly affect the taste of the finished recipe. Additionally, the sodium levels of the canned beans and chili powder blend you choose should be accounted for. Please adjust salt to your taste and in accordance with your dietary needs.

Roll the Taquitos

Start by warming the tortillas by placing them on a plate and covering them with a damp paper towel. Heat in the microwave for 10-20 second intervals, checking in between, until they are pliable. Note that times may vary between microwaves, this took 40 seconds in mine.

Keeping the stack of tortillas covered with the damp towel while you work, lay one tortilla on a separate plate and place 1-2 tbsp of the filling on the bottom third of the tortilla, keeping it about 1/2 in from the edges. Don’t overfill the taquito as it will be hard to roll to the proper shape.

Carefully roll the tortilla from bottom to top, using your fingers to hold tightly as you roll, and place seam side down on the air fryer tray. Immediately brush the top and sides with water to keep the outside of the tortilla from drying out, as this recipe does not contain added oil.

Note that this cuts down on cracking as the taquitos cook, however it will not completely eliminate it. The taquitos will still be crunchy and delicious.

Repeat until all 9 taquitos are rolled and on the tray, and sprinkle the tops with the additional chili powder.

Air Frying the Taquitos

Air fry for 8 minutes, until crunchy and starting to lightly brown on the edges, then carefully flip using tongs, and air fry for 4 minutes more. At this point, they should be crispy and piping hot. The filling will start to poke out the sides, this is normal.

Note that this is the timing that gave the best results in my air fryer. Keep an eye on the taquitos as they cook, as your model may brown faster.

Allow to cool for 5 minutes as the filling will be HOT. Serve with your favorite dipping sauce or salsa.

Storage Instructions

Store leftovers in the refrigerator in a tightly lidded container. When ready to serve, re-crisp them in your air fryer. This takes about 5 minutes in mine, but watch to make sure they don’t get overly browned.

  1. Preheat your air fryer to 375 degrees Fahrenheit.

  2. Using tongs, carefully turn the taquitos seam-side up and air fry for 4 minutes more. At this point, they should be crispy and piping hot. The filling will start to poke out from the sides, this is normal.
  3. Allow to cool for 5 minutes as the filling will be HOT. Serve with your favorite dipping sauce or salsa.

  1. I used the air fryer function on my Breville Smart Oven to test this recipe, but from what I have read, the results should be similar across different models.
